Vanilla Peach Tart

Beautiful and impressive, this is an easy dessert that tastes incredible and looks like it was made by a professional.

For the Dough:



For the Peaches:


1 cup sugar

1 tablespoon cornstarch

1/2 teaspoon salt

1 vanilla bean, split with seeds scraped (reserve the pod for another use)

8 cups sliced peaches cut 1/2 inch thick (fresh or frozen)

juice of one lemon


egg for egg wash

sugar for dusting on top before baking


Technique:


Preheat oven to 375 degrees and line a baking sheet with parchment paper.


For the dough:


On a lightly floured surface roll out dough into approximately a 10 x 13 inch rectangle. Transfer to parchment paper.


For the Peaches:


In a large bowl whisk together sugar, cornstarch and salt. Add vanilla seeds and rub vanilla into dry ingredients using fingers until well incorporated. Add sliced peaches and lemon juice. Stir to combine all ingredients.


Assembly:


Place sliced peach in a decorative and organized manner in the center of tart dough and leave an inch to an inch and a half of excess dough. Fold bottom and top of dough up over peaches, and then each side to create a rectangle.


Brush egg wash over top of tart dough and sprinkle a pinch or so of sugar over the tart.


Bake 45-50 minutes until fruit bubbles and crust is golden.
