Pear Tart

An absolute holiday favorite. The classy, simple and delicious pear tart is an elegant yet error proof dessert that celebrates the beloved winter flavor.

For the Dough: (4-6 servings)


2 oz cream cheese

4 tablespoons unsalted butter, room temperature

1/2 cup flour

1/4 cup sugar

1/4 teaspoon salt



For the Pears:


2 ripe pears, (red or green) sliced into 1/4 inch thick slices

1/4 cup sugar

4 tablespoons Cognac

juice of one lemon


1/2 tablespoon sugar for topping before baking

cinnamon, optionally for dusting before baking


Technique:


Preheat oven to 400 degrees and line a baking sheet with parchment paper.


For the dough:


Using a food processor or pastry cutter, combine butter and cream cheese. Add flour, sugar and salt. Combine until sticky dough forms.


Turn out dough onto parchment lined baking sheet, and using floured fingers press dough into about a 10 inch thin circle. Set aside.


For the pears:


In a medium bowl combine sugar, cognac, lemon and pears. Drain pears to remove liquid.


Arrange pear slices on tart dough starting at the edges overlapping each other in a decorative manner. Sprinkle finishing sugar and optionally cinnamon.


Bake 25-30 minutes.


Serve warm.
